WINE DESCRIPTION
Situated on the south-eastern slopes of their estate, the Stellenbosch vineyards, planted in 2003, stand as a testament to time, hosting some of the oldest vines in their collection. With Cabernet Sauvignon Clones 46 and 163, this grape variety is a treasure nurtured by hand-picking during harvest. In their cellar, meticulous attention is given to vinification, as grapes undergo separate processes. Gentle destemming and extended cold soakings precede spontaneous fermentation in small stainless steel tanks. After a 12-month aging period in custom-made French oak barrels, the wines are blended, further oak-aged, and left to mature in bottles for another year before unveiling their excellence.
