Thymiopoulos Rosé de Xinomavro is a vibrant and elegant rosé crafted by Thymiopoulos Vineyards in the Naoussa region of Greece. Sourced from several parcels of non-irrigated, young vines around the village of Fytia, the vineyards sit at altitudes between 450 and 650 meters on schist and granite soils. The region's warm continental climate is tempered by cooling winds from Vermio mountain or the sea, with high altitudes and a significant diurnal range during the ripening season contributing to the wine's freshness and elegance. Harvested by hand in early October, the grapes are destemmed, macerated for 12 hours, and fermented with wild yeasts in stainless steel tanks for 5 to 6 months. The wine then matures for 4 months in 500-liter, second-use oak barrels, resulting in a rosé that is both fresh and complex, with a harmonious balance of fruit and minerality.
