Giacomo Fenocchio Dolcetto d'Alba is sourced from a small 1 hectare plot at high elevation. Dolcetto is hand harvested and fermentation of grapes takes place with skin contact but without added yeasts for approximately 10 days in stainless steel tanks. Once fermentation is complete, the wine is aged for approximately 6 months in stainless steel tanks with a subsequent short refinement period in bottle before release.
