The vineyard Clos de Béru is the exclusive property of the estate. It's not classified as Premier Cru in Chablis only because, at the time of Count Eric de Béru's premature death, it was leased, and the family showed no interest in classification. Historically, Clos de Béru has always been perceived at the level of esteemed Premier Cru sites. Standing in the vineyard, the reason becomes evident – pure south-facing, gently sloping, yet sufficiently inclined, and very stony, representing the typical Kimmeridge soil. The boundaries were drawn by the monks along the terroir, resulting in an irregular trapezoidal shape for Clos. The wine is aged in tonneaux for the first year, followed by tank maturation.
