Neudorf Vineyards Tiritiri Chardonnay comes from a selection within the Moutere Hills and Waimea Plains planted on clay gravels and alluvial soils. The Chardonnay is entirely hand-harvested and whole bunch pressed. Fermentation takes place in a small proportion of new french oak barrels with partial use of native yeast to add complexity. Malolactic conversion follows fermentation to round out the crisp acidity and add delicate buttery notes. Maturation takes place on lees and the wine is bottled unfined.
