San Fereolo Red is produced with Dolcetto grapes, coming from 40 to 70 year old vines planted on sites between 400 to 500 meters of elevation and farmed according to principles of biodynamics. After being harvested by hand, this grapes are vinified in wooden vats using indigenous yeasts at warmer temperatures for the extraction of more complex aromas. Subsequently the wine moved to oak barrels to mature then a further period in bottle for for aging prior to release. The resulting wine has ethereal aromas of red fruits, blackberry, raspberry, pomegranate, plum with hints of star anise.
