Wine Description:
These Chardonnay vines for this wine originate from Aloxe-Corton in the northern Côte de Beaune, flourishing in hard limestone and marl soil with a South-East exposure. Pruned using the Guyot method, various seasonal vineyard techniques are employed, such as pruning and trellising on wires, as well as fruit-thinning. Harvested manually and sorted, the grapes undergo a gentle pneumatic press to ensure slow extraction. The resulting must is racked, and the wine ferments both alcoholically and malolactically in 228-liter French oak casks (30% new oak) using wild yeasts over 18 months, followed by aging on fine lees. Blending occurs in a stainless steel tank a month before bottling, and the wine is gently fined and filtered before bottling on a "root" day, following the lunar calendar.

Wine Expert Note:

This white wine from Vincent Girardin is a stunning example of Corton-Charlemagne Grand Cru. On the nose, it presents a complex bouquet of fresh citrus, white flowers and toasted hazelnuts. On the palate, the mineral-driven acidity is balanced by a creamy texture and notes of white peach and pear. The finish is long and lingering with a hint of spice and lingering minerality. Overall, this is an elegant and well-crafted Grand Cru that will reward with time in the cellar.

De Moor Chablis 1er Cru Mont de Milieu is a natural white wine crafted by Alice and Olivier De Moor from Chardonnay grapes in the AOC Chablis Premier Cru, located in Burgundy, France. Established by a young winemaking couple, Alice and Olivier De Moor, the domaine took root with the acquisition of 4 hectares of vineyards in Courgis, Burgundy. Cultivating their vines organically, the couple vinifies with minimal intervention, resulting in lively, energetic natural wines. De Moor Chablis 1er Cru Mont de Milieu originates from vines planted on red clay soils in the eastern part of Chablis. The organic and biodynamic plot avoids chemical use. Harvested late by hand in small crates to preserve grape condition, the grapes undergo a prolonged spontaneous fermentation with native yeasts in the cellar. The wine then matures for 18 months on its lees in old 225-liter oak barrels. Finally, it is bottled with a minimal amount of sulfur. Guided by the principle of avoiding techniques that could compromise the results, De Moor Chablis 1er Cru Mont de Milieu is a wine of good intentions and exceptional outcomes. A juicy and vibrant Premier Cru from Chablis.
