De Moor Chablis 1er Cru Mont de Milieu is a natural white wine crafted by Alice and Olivier De Moor from Chardonnay grapes in the AOC Chablis Premier Cru, located in Burgundy, France. Established by a young winemaking couple, Alice and Olivier De Moor, the domaine took root with the acquisition of 4 hectares of vineyards in Courgis, Burgundy. Cultivating their vines organically, the couple vinifies with minimal intervention, resulting in lively, energetic natural wines. De Moor Chablis 1er Cru Mont de Milieu originates from vines planted on red clay soils in the eastern part of Chablis. The organic and biodynamic plot avoids chemical use. Harvested late by hand in small crates to preserve grape condition, the grapes undergo a prolonged spontaneous fermentation with native yeasts in the cellar. The wine then matures for 18 months on its lees in old 225-liter oak barrels. Finally, it is bottled with a minimal amount of sulfur. Guided by the principle of avoiding techniques that could compromise the results, De Moor Chablis 1er Cru Mont de Milieu is a wine of good intentions and exceptional outcomes.
