Matthews Columbia Valley Cabernet Sauvignon is a testament to the rich tapestry of Washington State's terroirs. Crafted from select vineyard parcels across the Columbia Valley, including esteemed sites in Horse Heaven Hills, Red Mountain, and Royal Slope AVA’s, notably the Conner Lee vineyard, this wine embodies the essence of the region. Under the stewardship of a new winemaking team, vineyard practices were refined to reduce yields by 30%, yielding small, concentrated berries. Harvested meticulously by hand over a period of weeks, the grapes undergo a meticulous process upon arrival at the winery, including hand-sorting and cold soaking. Following a 14-day fermentation and extended maceration, the wine is aged for 19 months in a blend of new and used French oak, resulting in a bold yet elegantly integrated Cabernet Sauvignon with a complex flavor profile and refined tannins.

The Brander Los Olivos District Bouchet is a powerful and smooth Bordeaux-style blend from the renowned Brander Vineyard in Santa Barbara County. The name "Bouchet" is a slang term used for both Cabernet Sauvignon and Cabernet Franc in different areas of the Bordeaux region. First bottled in 1984, this wine is notable for being the first Meritage blend in the region. It features a composition of Cabernet Sauvignon, Cabernet Franc, and Merlot. The Cabernet Franc, from ungrafted vines planted in 1976, and the newer plantings of Cabernet Sauvignon and Merlot, contribute to the wine's complex profile. The blend is aged in French oak barrels, enhancing its depth and character. Produced with non-certified organic practices, this wine represents Brander Vineyard's dedication to quality and tradition. They produce about 120 cases per year, making it a rare and sought-after offering.

Meyer Family Cellars Spitfire Cabernet Sauvignon is a powerful, rich oaked wine from Oakville in Napa Valley, California. The estate-grown fruit was hand-picked, sorted, de-stemmed and crushed into stainless steel tanks to begin fermentation. After completing the alcoholic fermentation, the wine was racked off to barrel to mature for around 22 months in a combination of new and neutral American oak. This lengthy elevage served to round out the mouthfeel and enhance the ripe black fruit notes with sweet spice and vanilla.
