Fontanafredda Briccotondo Gavi is produced from the local Cortese variety in the commune of Gavi, located in the region of Piedmont in the Northwest of Italy. The historic Fontanafredda estate was established in 1858 and has helped to build the reputation of the region. The vinification involves gently pressing the grapes before transferring most of the juice to a stainless steel vats to begin the alcoholic fermentation. Wines are vinified at a low temperatures to retain fruit flavors, whilst a small proportion is fermented in barriques to add roundness. The wine is then blended and aged in stainless steel vats for around 2-3 months before being bottled.
