Sette Vigne Rosso is a blend of seven different Italian varieties. A de-stemming, the grapes are not crushed, allowing them to remain intact, reducing damage to the skins and optimizing color extraction. Fermentation takes place for 8-10 days aiming to achieve a soft extraction of aromas and gentle tannins. The Corvina grapes follow a different technique called “appassimento” which involves drying grapes in a well aerated loft until they lose up to 50% of their original weight in water. The grapes are crushed and placed in stainless steel tanks for a very slow fermentation. Following vinification, 40% of each of the seven wines is individually placed in second and third passage barriques for 6 months to gain added aromas of sweet spice.
