Rubbia al Colle Olpaio Val di Cornia Suvereto is produced by the historic Antinori family and comes from the appellation of Val di Cornia Suvereto in Tuscany. This wine is a blend of Cabernet Sauvignon and Merlot grapes that are selected and harvested by hand. After maceration on the skins, the fermentation is carried out in steel and wood. The resulting wine is left to mature for at least 12 months in French oak barriques to gain added spicy complexity. This is followed by a further passage of 12 months in large barrels, where the wine refines its organoleptic characteristics, oxygenating a little further. Finally it is left in the bottle for at least 6 months before release.
