Château Olivier in the Pessac-Léognan appellation is one of the oldest and most prestigious estates in Bordeaux. This family owned property was included as Grand Cru Classé, for both red and white wines, in the 1953 Classification of Graves. The 230 ha estate, of which 60 ha are devoted to vines, is located just 15 km south of the city of Bordeaux with the estate woodland providing not just a buffer for the vineyards but a vital habitat for multiple endangered species. The exact blend varies with each vintage but is always Cabernet Sauvignon dominant with Merlot in support. Vintages since 2023 have seen the inclusion of a small proportion of Petit Verdot. The winemaking can be described as plot-by-plot, with different parcels vinified separately and blended later. Extraction is gentle to ensure that harsh tannins are avoided. Maturation is for 12 months in roughly one third new oak, which is sourced from five different cooperages. The end result is a dry red wine with great density of fruit on nose and palate, with an ageforthy firm tannins structure and well integrated oak complexity. The wine is a reference point for those seeking to explore the southerly vineyards of Bordeaux.
