Domaine Chapel Vayolette comes from the Cru Beaujolais of Juliénas. The Vayolette parcel is a west facing steep slope planted to old gamay vines and worked by hand in organic agriculture. The fruit is harvested by hand before sorting. The grapes are fermented using whole bunch semi-carbonic maceration for about 3 weeks with native yeast and no sulfur dioxide is added. The wine is aged in fiber glass tanks for 9 months after which it is bottled unfined and unfiltered to retain the character of this complex and elegant red.
