Wiston Cuvée Brut is a delightful sparkling wine that showcases the potential of English sparkling wine. Wiston is a 6,000 acre estate in the South Downs of Sussex. It has been held by the Goring family since 1743. The wife of the later member of the Goring family wanted to plant a vineyard to remind her of her childhood spent in the Western Cape of South Africa. The vineyard in planted to equal amounts of Chardonnay, Pinot Noir, and Pinot Meunier. A healthy proportion of reserve wine is included to add complexity and to round the lean acidity. This is a delightful traditional method sparkling wine and a great choice for anyone seeking to explore the growing English wine scene.

Wiston Rosé is a blend of Chardonnay, Pinot Noir and Meunier. The grapes are hand harvested and pressed in whole bunches using a traditional, Coquard basket press (as used in Champagne) to preserve the delicate fruit flavours and aromas of the juice. The juice is fermented in stainless steel tanks after which a small proportion of still red wine was added to the blend to produce a rosé wine. A secondary fermentation occurs in bottle then aged for over 3 years to take on brioche flavors and develop the creamy textured mousse.
