This Cru Beaujolais Chénas 'Les Carrières' is produced by Paul-Henri Thillardon, who established his domaine in 2008. Vineyards are farmed organically, working some of the vineyards with a horse and using biodynamic treatments. Grapes are harvested manually and fermented using whole clusters. Maturation lasts for around 8 months in a combination of neutral oak and concrete tanks. Wines are bottled unfiltred and unfined creating a complex, earthy style of Gamay.
