Miles Mossop Saskia is a white blend comprised of mostly of Chenin blanc with a touch of Viognier, Verdelho and Clairette Blanche. Grapess are sourced from vineyards located on the slopes of the Paardeberg mountain. Most of the vineyards are old, dry-farmed, bush-vines that tends to produce very low yields. Vineyards and varieties are picked separately, dependent on their level of ripeness. After harvesting the grapes, they are gently whole bunch pressed. The resulting juice is transferred to French oak barrels and concrete eggs for fermentation. Finally, the wine is matured on its lees with regular stirring for around 10 months prior to its release.
