Hence, these two should not be confused in terms of quality. All our wines undergo spontaneous fermentation and strict organic farming, although they lack certification. After a few hours of maceration, there's immediate pressing into a sediment tank and steel fermentation. Post-fermentation, the wines rest in used barrels with full lees for six months, without any batonnage. These exceptional wines, from prime locations, exhibit remarkable complexity and finesse, some even approaching sublimity.
