The winemaking overseen by Leonardo Losito and his son Giovanni, both graduates in oenology, do not use additives or tricks in the winery; preferring to use low-intervention winemaking techniques. This is in part due to the work that was carried out in the vineyard by relying on organic farming techniques. The grapes are crushed and destemmed, then macerated on skins for 15 days, with fermentation at controlled temperature at 25 ° C with selected yeasts. The wine is then aged in steel to preserve the fruit aromas to yield a richly flavored intense red wine.
