Olivier Lamy is among the handful of winemakers who have recently initiated a small revolution in viticulture. This includes the rediscovery of ancient high-density planting methods, reminiscent of those used in the Middle Ages, which can involve planting well over 20,000 vines per hectare. Lamy revives these practices in his Haute Densité wines. Additionally, he explores new and somewhat unconventional approaches for Burgundy, such as a higher trellis system, alternative soil cultivation techniques, an extremely late pruning schedule, and a significant reduction in yields. These changes, in conjunction with the overall vineyard transformations and high-density planting, characterize Lamy's innovative winemaking.
