The wine ferments slowly with wild yeasts adding complexity and nuance to the wine. After 18 months of full lees contact, the wine is racked and kept on fine lees until bottling two years later. The resulting wine is energetic, showing steely acidity and fine balance with the delicate citrus-led fruit profile.
