These Chardonnay vines for this wine originate from Aloxe-Corton in the northern Côte de Beaune, flourishing in hard limestone and marl soil with a South-East exposure. Pruned using the Guyot method, various seasonal vineyard techniques are employed, such as pruning and trellising on wires, as well as fruit-thinning. Harvested manually and sorted, the grapes undergo a gentle pneumatic press to ensure slow extraction. The resulting must is racked, and the wine ferments both alcoholically and malolactically in 228-liter French oak casks (30% new oak) using wild yeasts over 18 months, followed by aging on fine lees. Blending occurs in a stainless steel tank a month before bottling, and the wine is gently fined and filtered before bottling on a "root" day, following the lunar calendar.
