On the nose, it has aromas of white flowers and citrus fruit. On the palate, flavors of lemon, green apple, and stone fruits are present. Christophe Patrice is a native of Beine in the Chablis region. He began working in the family business in the late 90s. Their vineyards are planted at a low density and managed following a lutte raisonnée (sustainable) regimen. For Christophe, Chardonnay expresses itself in Chablis like nowhere else, so he insists on vinifying his wines entirely in stainless steel tanks to preserve their typicity and freshness. The fruit is whole-bunch pressed to stainless steel tanks for a cool fermentation with indigenous yeast. Malolactic conversion is completed with indigenous bacteria and the wine is matured on fine lees in tank for 4 months prior to bottling. Christophe Patrice Chablis is a fantastic representation of the Chablis style, offering a combination of fruit, minerality, and freshness.
