After harvesting, the grapes undergo gentle maceration and then fermentation on the skins to extract the aromas of these highly aromatic grape varieties optimally. The spontaneously fermented wine was aged in large, neutral wooden barrels. Of course, Christian filled it unclarified and unfiltered – all natural!
