Vineyard 7 and 8 Cabernet Sauvignon is made from estate-grown, hand-picked fruit from the prestigious Oakville sub-region based in the Napa Valley, California. The grapes are sorted prior to a whole-berry fermentation in a large proportion of new French oak barrels for an extended maceration. Maturation takes place in new French oak for around 2 years to soften the muscular tannins extracted during the lengthy post-fermentation maceration.
