Nestled near the esteemed Château de Pommard, the Chavy-Chouet LA TAUPE Bourgogne Rouge AOC draws its essence from a two-hectare vineyard of Pinot Noir vines, planted in the 1950s at an impressive density of 10,000 vines per hectare. Meticulous hand-harvesting ensures only the ripest grapes reach the winery, where they are gently pressed and undergo spontaneous fermentation on the skins. Following this natural process, the wine matures for 10 months in traditional Burgundian barrels, or "Pièces," with 10% of these barrels being new oak.
