Château Milon Caprice Saint-Émilion is an unoaked, mono-varietal Merlot sourced from 2 hectares of vines. A portion of the vines are located on a sand, iron-rich sandstone slope, with the rest planted on gravel soils. After harvesting, the grapes are cold macerated to enhance aromatics, then undergo a thermoregulated fermentation. The wine is matured in steel tanks for around 12-15 months prior to bottling as not to mask the purity of fruit.
