Domaine de La Noblaie Les Chiens - Chiens is made by Jérôme Billard who has taken over the reins of the family business in recent years. Jérôme trained with Moueix in Bordeaux and California, and later in New Zealand, and returned to the domaine with a fresh outlook but a great respect for the integrity of Chinon’s grapes, working organically since 2008. This wine is produced from hand-harvested grapes. After crushing, the juice and solids are moved through the cellar by gravity. The grapes from these plots develop a full-bodied, spicy character during some 20 days of maceration. Aging takes place for 15 months in large 500 liter barrels on lees to soft the wine without marking it with oak aromas. The result is a refreshingly herbal, dark, chewy, and intense wine.
