Celler del Roure Parotet is a remarkable red wine made from lesser known varieties using uncommon methods. Cellar del Roure is located in the south east of the Valencian community. The exact make-up of this wine changes from vintage to vintage. The wine is focused upon the grape variety Mandon, locally called Mando, which hails from the Balearic islands. In some years, Monastrell is sometimes used in support. This rare Mandon gapre is prone to oxidation so the winemaking protects it from oxygen exposure. Fermentation takes place in stainless steel tanks via ambient yeasts, and with a short vatting time. Maturation takes place in clay jars burried in the ground.
