The fruit, hand-harvested and triple sorted (in the vineyard, before, and after destemming), was primarily whole berries gravity-fed into stainless steel fermenters. To concentrate the juice for red fermentations, approximately 20% of the juice was bled from the tanks after 24-48 hours and used for rosé. Fermentations were conducted separately by variety and clone, with daily pump overs and manual punch downs for maximum extraction of color, aroma, and flavor. After 8-10 days of fermentation and 7-14 days of post-fermentation maceration, the young wines were pressed and aged in French oak barrels for 12-15 months, completing malolactic fermentation in barrel.
