Crafted from 100% Xinomavro grapes, this wine is a true reflection of the Amyndeon plateau's distinctive terroir. Nestled in the Amyndeon viticulture zone within North-western Macedonia, specifically the "Hedgehog" sub-region, the 69 hectares of privately owned vineyards thrive at altitudes ranging from 620 to 710 meters. With a north-facing exposure towards Lake Petron and Mount Voras, the grapes benefit from a unique microclimate. The winemaking process involves careful destemming, cold soaking with skin contact, and gradual temperature-controlled alcoholic fermentation. The wine matures for twelve months in French oak barrels, followed by an additional twelve months in the bottle, resulting in a harmonious and expressive Xinomavro.
