Gérard Tremblay, the fifth-generation owner of his family’s Chablis domaine, has expanded the estate from 30 to 100 acres, including 30 acres of Premier and Grand Cru sites. A passionate purist, Gérard practices "Lutte raisonnée" sustainable viticulture, with meticulous plowing to preserve the terroir, enhancing the Chardonnay’s vibrant character due to the Kimmeridgian limestone subsoil. In 1990, a new winery and underground barrel cellar were built, utilizing gravity-fed winemaking. Gérard carefully balances oak use, aging about a third of Vaudésir in barrels for 12 to 14 months. His son, Vincent, is now beginning to take over winemaking responsibilities.

Maison Fèvre produces twice as much as Domaine Fèvre, resulting in a significant quality difference. While Domaine focuses on organic vineyard work, this isn't the case for Maison. Hence, these two should not be confused in terms of quality. All our wines undergo spontaneous fermentation and strict organic farming, although they lack certification. After a few hours of maceration, there's immediate pressing into a sediment tank and steel fermentation. Post-fermentation, the wines rest in used barrels with full lees for six months, without any batonnage. These exceptional wines, from prime locations, exhibit remarkable complexity and finesse, some even approaching sublimity.

Clos des Rocs Monopole Pouilly-Loché is a distinguished white wine from the esteemed Pouilly-Loché appellation in Burgundy. Crafted by Clos des Rocs, this wine originates from a meticulously managed 3-hectare vineyard featuring over 70-year-old vines planted at an altitude of 250 meters. The terroir consists of shallow, reddish soil mixed with limestone stones, providing a unique mineral character. The winemaking process begins with hand-harvested grapes that undergo a slow pressing. The wine is then fermented with indigenous yeasts, enhancing its purity and complexity, and aged with minimal intervention to preserve its inherent qualities. The result is a refined and elegant Pouilly-Loché with a rich, nuanced profile, reflecting both the age of the vines and the meticulous care taken in its production.
