De Toren was named after the tower on the cellar roof and was South Africa's first gravity-fed cellar. Albie Koch serves as COO and Managing Partner.

Located on the flanks of the Polkadraai Hills, the 25-hectare estate has vineyards planted facing south into the summer wind off False Bay. The estate grows Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec, and Petit Verdot using organic vineyard practices. Up to 40% of grape bunches are removed prior to harvest to concentrate berries, and grapes are exclusively hand-harvested by a select team of women for 2 to 3 hours in the early morning. The winery operates as a 100% gravity-fed cellar using a gravity-operated hoist, with vinification taking place in smaller, wider custom-designed tanks to increase skin contact. Its wines include De Toren Fusion V, a Cabernet Sauvignon-dominant Bordeaux-style blend, and De Toren Z, a Merlot-dominated blend named after the Dutch word for South (Zuid).
