Fjodor
Rich, full-bodied red juice with a nuance of carbonic maceration, showcasing Tempranillo's natural fruitiness. The tartness is sharp, yet cohesive by a bright quality, calling to mind of unripe fruit. The flavor profile is complex, with flavors of raspberry, blackberry, hibiscus, red pepper, and tobacco, all harmoniously intertwined with a understated sweetness. The finale is long and satisfying, leaving a resonant feeling of the wine's natural essence.
Chamsou
Light-bodied red wine with a cloudy, medium-ruby hue. It's a bright and easy-drinking wine with a Mediterranean twist, featuring undertones of plum, beetroot, and thyme, polished by a suggestion of freshness and a touch of grip.

Bold move, indeed. I took a bite of the pulled pork before snapping the photos. Mid-chew, a sudden pang of regret struck me. Today, I crafted a wild boar-based dish and paired it with this wine. The wine's essence featured a nuance of barnyard scent + ripe cherries, sour cherries, and lingon berries. Without oak, the suggestions remained surprisingly straightforward. This wine is a refreshingly authentic representation of its varietal, boasting a remarkably low ABV of 11.5%.

Joan Rubió Ull de Llebre receives mixed reviews. Some appreciate its rich, full-bodied nature and complex flavors like raspberry, blackberry, and forest floor, while others find it light-bodied and easy-drinking with notes of plum and thyme. The wine's tartness and low ABV are noted, with some enjoying its refreshing authenticity, though a few find it lacking depth. The finish is generally satisfying.
This Catalonian red, crafted from the Ull de Llebre grape, presents a deep garnet hue with a nose of ripe black cherry and wild herbs, underscored by a subtle minerality. On the palate, it reveals a medium-bodied structure with velvety tannins and a vibrant acidity that frames the core of dark plum and dried fig flavors. The wine's complexity is further enhanced by hints of anise and a whisper of earthiness, leading to a lingering, harmonious finish. A quintessential expression of its terroir, this wine is a compelling example of modern Spanish winemaking.
