Pascal Jolivet was founded in 1987. The Jolivet family entered the wine trade in 1926 with the establishment of the merchant company Jolivet et fils. In 1983, Jacques Jolivet acquired the merchant firm Les Grands Vins du Val de Loire and offered his 25-year-old son Pascal its directorship. In 1990, Pascal Jolivet invested in building a cellar in Sancerre equipped with temperature-controlled stainless steel vats. In 1993, Jacques proposed that Pascal buy 6 hectares of vineyards in Bué-en-Sancerre, including Le Chêne Marchand, Le Grand Chemarin, and La Plante des Prés. The estate acquired its first Pouilly Fumé vineyards in 1995, comprising 6.5 hectares in Tracy-sur-Loire, and constructed a new gravity-flow winery in 2001.

The estate spans 120 hectares between the Sancerre and Pouilly Fumé appellations, plus 60 hectares in Touraine for Attitude. Fermentation is carried out with indigenous yeasts following light settling, followed by aging on lees.
On VinoVoss, Pascal Jolivet has 2 wines in stock: 1 red, 1 white. Their average rating is 3.8 out of 5 from 253 ratings.
