At Domaine Breton - Catherine & Pierre Breton, Pierre took over the family vineyard in Bourgueil and vinified his first cuvée in 1985. In 1989, Catherine and Pierre took over an additional six hectares in Chinon. Later, Paul joined Catherine in Vouvray and vinified the parcel selection cuvée Pierres Rousses, while France and Baptiste joined Pierre in Bourgueil and vinified a new grolleau in a fresh and light style.

Appellations include Vouvray, Bourgueil, and Chinon, with grapes grown including Chenin, Cabernet franc, Grolleau, and Pineau d'Aunis. The estate practices organic and biodynamic viticulture with hand harvesting, limited yields, and no synthetic fertilizers or chemical weedkillers, and is certified organic by Ecocert. Vinification is conducted with natural indigenous yeasts: white grapes are pressed promptly after picking, and red wines undergo alcoholic fermentation in wooden vats followed by malolactic fermentation. Total SO2 is less than 20 mg/L for red wines and less than 50 mg/L for white wines, and its wines include Trinch! and Nuits d'Ivresse.
