The Elephant Hill tasting was a mixed bag, with one standout element that left a enduring impression. The dominant accents were a potent mix of sweaty armpit and green capsicum, with a gentle wisp of lime. However, the advertised dried herbs and flint were noticeably absent, leaving a noticeable gap in the as a whole profile. The body was substantial, with a good equilibrium of mellow and sharp acidity, while the trail was satisfying. The only notable absence was the use of stainless steel, which was instead made from a single type of lees. A 9-month aging process was used to achieve a certain level of smoothness and complexity, but ultimately, the result felt somewhat one-dimensional. Overall, the Elephant Hill tasting was a solid effort, but one that fell short of its full potential.
