Te Mata was originally part of Te Mata Station, established in 1854 by English immigrant John Chambers. In 1892, Bernard Chambers planted vines on three parcels of hillside land above the homestead, with the first wines released and sold in 1894, and the estate established in 1896. The Buck and Morris families acquired the property in 1974, and in 1987, a winemaker's laboratory, staff facilities, offices, and a visitor centre were added.

Wines are produced exclusively from Hawke's Bay vineyards, which include Havelock Hills—containing Awatea, Elston, and Coleraine Vineyards—and Woodthorpe Terraces in the Dartmoor Valley. Farming systems include regenerative farming, precision viticulture, biodynamics, and organics, alongside the Sustainable Winegrowing New Zealand programme. Furthermore, the estate uses only recycled glass for bottles, and Estate Vineyards wines are sealed with screw caps. Its wines include Coleraine, Awatea Cabernets/Merlot, Bullnose Syrah, Alma Pinot Noir, Elston Chardonnay, Cape Crest Sauvignon Blanc, and Zara Viognier.
