Tamber Bey produced its first vintage of 50 cases in 2001. Founding winemaker Thomas Rivers Brown served for the winery's first decade, and Sally Johnson Blum serves as winemaker. Barry and Jennifer Waitte manage operations and marketing, and Barry's daughter Kendra manages the wine club.

In 2012, the Waittes bought a 22-acre equestrian ranch in Calistoga and converted it into a winemaking facility. Vineyards include the Oakville Estate and the Deux Chevaux Vineyard in Yountville, planted with Cabernet Sauvignon, Cabernet Franc, Petit Verdot, Malbec, Merlot, and Chardonnay. Winemaking emphasizes gravity over pumps, a light hand on the press, restraint with new oak, inertia-based destemming via an Oscillys destemmer, and optical sorting using compressed air. Its wines include the Vermejo and a 100% Cabernet Sauvignon from Oakville Estate Vineyard, first released in 2002.
