Schloss Saarstein is a 10-hectare wine estate whose manor house and extensive farm buildings were built by an industrialist from Trier in the early 20th century. Christian Ebert keeps its nature-friendly viticulture uncertified because he wants to keep his options open. The vineyards face south to south-west, with grey slate that warms readily and stores the day’s heat. Riesling accounts for more than 90 percent of the vineyard area. The extreme site conditions require almost all vineyard work to be done by hand, with help from a crawler tractor. Ebert categorically rejects synthetic fertilisers and insecticides. Its wines include “Saarstein” at VDP.GUTSWEIN level, “Schloss Saarstein” at VDP.ORTSWEIN level and “Serriger Schloss Saarsteiner” at VDP.GROSSE LAGE level.
