Lucien le Moine is a wine house in Beaune, founded in 1999 by Rotem and Mounir Saouma. Pinot Noir and Chardonnay drew them to the area, and discovering the Côte d’Or and its wines led them to stay.

The house produces only Grands and Premiers Crus from the Côte d’Or, making one to three barrels per cru and never more than 100 barrels in total. All wines age in oak from the Jupilles forest, with gentle lees stirring three to four times a month. During spring, the cellar is closed to retain humidity and low temperatures, delaying malolactic fermentation until late summer. The wines are neither fined nor filtered, and each cru is bottled by gravity after a full moon whenever it is ready.
