Les Jamelles was created in 1995 by Catherine and Laurent Delaunay and launched in the United States. Catherine Delaunay heads winemaking with a team of seven winemakers/oenologists, and in 2010, the wines were launched on the French market in restaurants, bistros, and wine shops.

The winery was constructed in 2015 in Monze, near Carcassonne, in the Corbières region. Vineyards include 60 hectares, along with more than 400 hectares of vineyards under contract with partner winegrowers. Grapes are shielded from oxidation at each stage of winemaking and moved by gravity. Its wines include a traditional method sparkling wine blending Chardonnay and Pinot Noir, added in 2010, and the Sélection Parcellaire range of four cuvées created in 2019.
