Paul Lefèvre purchased the estate of Château de Valmer in 1888. The main château was destroyed by a fire in October 1948, but Aymar took over the neglected wine estate and decided to replant the vineyard after marrying in 1972. In 2009, Jean de Saint Venant took over the estate, expanding the vineyard and modernizing the winery.

The entire estate encompasses 300 hectares, with 35 hectares for the wine estate. Vineyards are planted on slopes with clay-limestone soils overlooking the Brenne valley, and six hectares of vines are planted within the historic walled park. The estate cultivates Chenin Blanc to produce sparkling, dry, semi-dry, and sweet white wines, and its wines include Vouvray and Touraine Rosé. Winemaking takes place in semi-underground cellars built in 1905 equipped with glass-lined concrete vats. Thermo-regulated enameled concrete vats are used for fermentation, followed by 6 months of aging on fine lees in tanks, and final aging in tuffeau limestone caves.
