For Castello di Monsanto, the year 1962 was the estate's first harvest and the birth of the first Chianti Classico Cru. In the early 1970s, stainless steel fermentation tanks began replacing wooden tanks, and Slavonian oak barrels replaced chestnut barrels. A 300-metre underground tunnel was hand-excavated for wooden barrel storage using marl stones from the vineyards.

Its vineyards are il Poggio, Scanni, il Mulino, and il Salcio, and the grapes grown are Sangiovese, Canaiolo, Colorino, Chardonnay, and Cabernet Sauvignon. Planting density is around 5000-5500 plants per hectare using guyot and spurred cordon systems. Herbicides are not used, weeds are managed mechanically, cover crops are planted for soil fertility, and massal selection selects plants for future vineyards. Its wines include Chianti Classico Gran Selezione from Il Poggio vineyard, Sangioveto Grosso from Scanni vineyard, Fabrizio Bianchi Chardonnay, and Nemo (100% Cabernet Sauvignon).
