The 18 plots of the winery Anne Sophie Dubois are situated in the Fleurie appellation at the lieu-dit Les Labourons. The vineyard features an average elevation of 400 meters with a west-southwest exposure, slopes exceeding a 30% grade in certain parcels, and soil composed primarily of sand and stones from pink granite bedrock. Gamay is grown with a planting density of between 8,000 and 10,000 vines per hectare, and organic farming certification started in 2018.

Grapes are harvested manually into small picking boxes, and gravity-flow winemaking is used from harvest through pressing, which is carried out using a traditional vertical wooden wine press. Fermentation occurs with indigenous yeasts, and whole bunch fermentation was reintegrated in 2015. No additives are used during vinification, with only a small amount of sulfur added at bottling. The wine undergoes maturing in oak casks and bottling without fining or filtration, and its wines include Les Labourons, Les Cocottes, and L'Alchimiste.
On VinoVoss, Anne Sophie Dubois has 2 wines in stock: 2 red. Their average rating is 4.2 out of 5 from 22 ratings.
