Rivarossa Schiopetto is a red wine of great structure and complexity produced by the Schiopetto winery in the Friuli Venezia Giulia region of north-eastern Italy. Rivarossa Schiopetto is produced mainly from Merlot grapes, with a small percentage of other red varieties such as Cabernet Sauvignon and Cabernet Franc. The vineyards from which these grapes come are located on hills of morainic origin, with predominantly clayey and calcareous soils, which give the wine a particular minerality and complexity. The production process of Rivarossa Schiopetto begins with the harvest, which usually takes place in mid-October. The grapes are harvested by hand and carefully selected to ensure the highest quality. This is followed by fermentation in temperature-controlled stainless steel tanks to preserve the aromas and flavor of the grapes. After fermentation, the wine is aged in French oak barriques for 12 to 18 months, which gives it complexity and structure.
