Recent proliferation of 2021 Bacchus from Chapel Down and Winbirri has led to a noticeable trend, with the latter emerging as the standout. This wine's evenness is slightly compromised by a nuance of sweetness, which, but not entirely unbalanced, detracts from the overall experience. The nose reveals a intricate array of aromas, featuring nettle, gooseberry, and elderflower, and yet the texture is characterized by the structure of tropical notes, kiwi fruit, and grapefruit acidity. Despite its ripeness, this wine remains remarkably drinkable, and its 2021 vintage is noticeably more mature than anticipated.
