Byeonghee
The nose is a vibrant explosion of fruit flavors, with a bold interplay of chocolate and cocoa notes. The palate is light and airy, with a dominant feel of chocolate that gradually gives way to a delicate fruitiness. A accent of spice lingers, but the dominant flavor profile is one of fruit and cocoa. As a relative of Malbec, I expect more pronounced pepper and spices. To unlock the full potential of this long-lost grape, I believe a more nuanced approach to winemaking and vineyard management is necessary. A more smooth expression of this wine is warranted.
