Thymiopoulos

The Thymiopoulos family has practiced agriculture and grape-growing in the village of Trilofos for generations. Apostolos Thymiopoulos was the first member of the family to vinify the family vineyards while he was studying oenology.

Thymiopoulos winery is located in Trilofos, a village on the foothills of Vermio mountain, and the producer has vineyards in Trilofos and Fytia. All of the vineyards are farmed organically, following biodynamic practices that were selected after careful assessment of their impact on the vine. The producer follows sustainable viticulture and applies minimum intervention during the whole winemaking process. Apostolos Thymiopoulos applies this philosophy to produce ten different expressions of Xinomavro, a variety of Northern Greece, and its wines include Earth and sky.
