Slavček

Slavček is Franc and Alenka Vodopivec’s wine farm in Potok pri Dornberku, documented in church records from 1769. At that time, it was called *pri Slavčevih*, meaning “at the Slavček household.”

Its terraced vineyards occupy the tops of marl hills at elevations of up to 200 metres. Farming follows biodynamic principles and involves much time-consuming manual work, including selective harvesting by hand. In the cellar, fermentation begins in contact with the grape berries; this contact lasts for a shorter period for white and fruit wines. Some wines mature in oak and acacia barrels made from trees growing at the vineyard’s edge. Before bottling, only a small amount of sulphur is added to the wine, and no other preservatives are used.
